Prepared with scrambled eggs, ham, and lots of melting cheese, these Make Ahead Croissant Sandwiches can be prepared weeks in advance. These are so delicious, you might want to make them often, not just for Christmas morning!
Whisk the eggs and scramble them in a skillet with one tablespoon of butter. Set aside to cool.
In the meantime, combine the remaining two tablespoons of butter with the mayonnaise, dijon mustard, brown sugar, and ground black pepper.
Evenly spread the butter and mayonnaise mixture onto each cut half of the croissants.
Lay the bottom half of the croissants onto a cutting board. Top each with one slice of cheese and two slices of ham.
Next, layer on the scrambled eggs, evenly distributing over the six croissants.
Top the eggs with another slice of cheese.
Place the top half of the croissants on top and gently press down to sandwich everything together.
Wrap each individual sandwich in aluminim foil and place in your fridge until ready to bake. (Prepared sandwiches will keep in the fridge for 2-3 days.)
To bake, remove the sandwiches from the fridge and place them on a baking sheet while you preheat your oven to 350 degrees F.
Once preheated, bake the sandwiches for 20 minutes. Remove them from the oven and serve while still warm.
