Lilacs are in full bloom right now, and if you're lucky enough to have a few trees near your house, I'm sure you can smell that lovely fragrance. Did you know that lilac petals are edible? Lilac Syrup is made with fully-bloomed lilac petals and is a great way to infuse some of your favourite early summer recipes with the lovely scent and a slightly citrus-like taste.
2cupslightly packed lilac petals(see post for details)
10-12blueberries,optional
Instructions
Add the water and sugar to a sauce pan and bring to a boil over high heat.
Once boiled, stir in the lilac petals.
Add the blueberries if using. The blueberries are added for colour. Without them, the syrup will be a pale yellow. Blackberries can be used as well. If you don't have any berries, you could use a drop of food colouring, or let the syrup have a natural colour.
Stir the berries into the mixture.
Turn off the heat and cover the sauce pan with a lid.
Allow the mixture to steep for 4 hours.
Drain the mixture through clean cheesecloth and store in food-safe bottles.
Keep refrigerated. Will store safely for two weeks.
Notes
Makes two cups. Serving size depends greatly on what you are using the syrup for. A cocktail might use only two teaspoons, but you may use four tablespoons in a glass of sparkling water.
