If you cannot decide whether you want a hot dog, a burrito, or a taquito for dinner, then you should just have all three in one! Bean and Cheese Hotdog Taquitos are prepared by rolling a tortilla with refried black beans, shredded cheese, and a hotdog. Grill until golden and crispy. Serve with your favourite dippers!
Melt the butter in a large skillet, over medium heat. Add the hotdogs and cook, turning occasionally, until hotdogs are heated through. This will take about 5-7 minutes. Turn off heat and pour over the barbecue sauce. Move hotdogs around with tongs until each one is completely covered with the sauce. Set aside until ready to use.
Working with one tortilla at a time, lay one flat on a cutting board.
Liberally smear half of the tortilla with Bush’s® Refried Black Beans. Two heaping tablespoons will do just fine.
Top the fried black beans with a prepared hotdog.
Sprinkle over 1/4 cup of shredded cheddar cheese.
Starting from the bean and cheese side of the tortilla, roll the hotdog, cheese and bean mixture firmly into a log. Set aside, seam side down.
Continue these steps until all 12 of the tortillas are rolled and prepared.
Using a grill or panini press, grill the taquitos until the tortillas are golden brown and the cheese is all melted.
Serve with salsa, guacamole, and sour cream. Enjoy!
