Not all cakes and loaves need to be sweetened with sugar, nor do they need to be made with desserts in mind. Loaves lend themselves quite well to an afternoon tea or coffee break, especially if they are prepared to be savoury like in the case of this Apple and Cheese Bread!
1 1/2cupdiced apples(measure after the apples have been peeled and diced)
1tablespoonapple cider vinegar
1 1/2cupsall-purpose flour,
2teaspoonsbaking powder
1/2teaspoonsalt
3/4cupsour cream
2tablespoonshoney
3largeeggs
1/3cupapple juice
1/2cupcanola oil
1 1/2cupsshredded cheddar cheese
1tablespoonfresh thyme leaves
1/2tablespoonfresh rosemary,finely chopped
Instructions
Prepare the apples by peeling them and cutting them into half-inch dice. Place them in a bowl and toss them well with the apple cider vinegar to prevent browning.
Start by preheating your oven to 350 degrees F.
Lightly grease a loaf pan with non-stick cooking spray. Set it aside.
Sift the flour with the baking powder and salt into a large bowl.
In a second bowl, whisk together the sour cream, honey, eggs, apple juice, and canola oil.
Slowly whisk the dry ingredients into the wet ingredients.
Add the apples, shredded cheese, thyme leaves, and chopped rosemary to the batter. Fold in using a spatula until just incorporated.
Transfer the batter to the prepared pan and bake for about 35-45 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Remove the loaf from the oven and allow it to rest in the pan for 10 minutes before turning it out onto a cooling rack to finish cooling.
