With a couple of handfuls of fresh strawberries, a splash of vanilla extract, and some sugar, you can make the most easy and deliciously simple Strawberry Dessert Sauce. Pour it over pancakes or waffles, drizzle some on ice cream, or shake an ounce into your favourite berry-based cocktail!

Strawberry Dessert Sauce can be stored safely in a mason jar in the refrigerator for up to two weeks. But, in most cases, it won’t last that long! When you think about the many uses, I’m sure you’ll agree. We like to spoon a heaping amount over plain Greek yogurt or some good vanilla ice cream. It’s perfectly paired with a scone and a bit of clotted cream. Or, you can eat it right out of the jar – I’m not kidding!

INGREDIENTS NEEDED FOR THIS RECIPE:
The following is a list of the ingredients needed to prepare this recipe. For exact amounts and measurements, refer to the printable recipe card located near the bottom of this post.
- Strawberries – Most of the recipes with strawberries on my site have been prepared when strawberries are in season because that is when they taste the best! This dessert screams summer, so try to get locally-grown, in-season strawberries if possible.
- Vanilla Extract
- Sugar – You might be tempted to cut the sugar back if you’re concerned about the sweetness, but I assure you, strawberries can handle a lot of sugar without compromising their natural flavour.
HOW TO MAKE STRAWBERRY DESSERT SAUCE
Transfer the prepared strawberries to a food processor. Process until the strawberries are pureed and completely smooth. Strain the pureed strawberries into a saucepan through a fine-mesh sieve, discarding any seeds or pulp left in the sieve. Add the sugar and vanilla extract.
Over medium-high heat, bring to a boil. Once boiling, boil for 1 minute before reducing the heat to low. Allow the syrup to simmer for 10 minutes, stirring occasionally, until syrupy. Turn off the heat and allow the sauce to cool for 20 minutes before transferring it to a glass, food-safe bottle with a tight-fitting lid. Refrigerate to chill for another 40 minutes. Store in the fridge for up to 2 weeks.

ALTERNATIVE PREPARATION METHOD
Here’s the thing when it comes to fruits or berries that have seeds. Some people don’t mind them and others cannot stand them – especially in a sauce, jam, or jelly! I’m one of those persons that don’t mind them at all, but John.e doesn’t care for it. One time, I prepared a large batch of red currant jam without straining it and he wouldn’t eat it. So, if you’re like John.e, I have a solution for you.
It’s quite simple really. Just skip the part where you puree the strawberries. Wash them and remove the stems. Halve or quarter them depending on the size and transfer them to the saucepan with the sugar and vanilla extract. Cook as per the instructions in the recipe card and once done, you can leave it as it – meaning a little chunky – or you can strain it through cheesecloth or simply use a slotted spoon to scoop out the chunks of berries.
